The langoustine, also referred to as North Atlantic lobster, is mostly found and caught in the North Atlantic, from the North Sea in the south to the waters off the coasts of Norway and Iceland.
The Langoustine is a real predator, catching prey with long and strongly built arms with powerful claws at the end. The fish meat from the tail of the Langoustine is soft and extremely fine in flavor. It is hard to imagine another shellfish with such a widespread image of luxury.
The shells also contain a lot of flavor, so it common to chop the shells up and freeze them after picking out the meet. Then you use them the next time your looking for a taste of the atlantic in your meal. Even 15 minutes of simmering in the broth will add a subtle lobster flavor to a seafood risotto or paella.
